Keeping the harvest

Preserve

There are many ways to keep a harvest. Freeze-drying is the one I prefer, and I explain why below. Extracts are another, if you want to try one at home.

Freeze-drying

Why I prefer it, and how it works

Freshly picked mushrooms are frozen, then the ice is gently drawn off under vacuum. No harsh heat, no additives, and the flavour, aroma and texture stay close to the fresh thing.

Step 1FreezeSliced mushrooms are frozen solid.
Step 2VacuumThe air is pumped out of the chamber.
Step 3Gentle warmthThe ice turns straight to vapour and is trapped.
Step 4SealDry mushrooms go into a pouch, ready for the cupboard.

Extracts

Another way to keep it

Extracting is a home project: dual extraction uses both alcohol and hot water, and a glycerine infusion is another route. Our written tutorials are for home, culinary use.
